Taren's Easy Burrito Bowl Recipe

Easy and delicious - as simple as that!

WHAT YOU’LL NEED

  • 1/4 cup black beans

  • 1/4 cup cooked brown rice

  • 1/2 cup of red cabbage, sliced thin

  • 1 tsp chicken or vegetable broth

  • Pinch of cumin

  • Pinch of cayenne

  • Pinch of garlic powder

OPTIONAL:

  • 3 oz precooked grilled chicken breast, sliced thin

  • Handful chopped romaine lettuce

  • 2 tbsp. nonfat greek yogurt

  • 2 tbsp fresh salsa

  • 1 tbsp guacamole

  • Fresh cilantro, for garnish

  • Sliced green onions, for garnish

TO PREP

  1. In a skillet, heat the black beans with broth, cumin, cayenne, and garlic powder on high for 5 minutes.

  2. Add red cabbage to a bowl, then spoon the beans on top. Layer sliced chicken, lettuce, greek yogurt, salsa, and guacamole. Top off with cilantro and green onions.

Serves 1.
