Taren's Easy Burrito Bowl Recipe
Easy and delicious - as simple as that!
WHAT YOU’LL NEED
1/4 cup black beans
1/4 cup cooked brown rice
1/2 cup of red cabbage, sliced thin
1 tsp chicken or vegetable broth
Pinch of cumin
Pinch of cayenne
Pinch of garlic powder
OPTIONAL:
3 oz precooked grilled chicken breast, sliced thin
Handful chopped romaine lettuce
2 tbsp. nonfat greek yogurt
2 tbsp fresh salsa
1 tbsp guacamole
Fresh cilantro, for garnish
Sliced green onions, for garnish
TO PREP
In a skillet, heat the black beans with broth, cumin, cayenne, and garlic powder on high for 5 minutes.
Add red cabbage to a bowl, then spoon the beans on top. Layer sliced chicken, lettuce, greek yogurt, salsa, and guacamole. Top off with cilantro and green onions.
Serves 1.
